My dolphins always despawn when i put them in an enclosure even when they have nametags from naming the spawn egg or using nametag item and i do remember to give them breathing room

Thats not true. Any mob that is name tagged should never despawn. It's in the official wiki for MC.
Minecraft 1.16.2 Still having this same issue. gonna report it as another bug.
