After I deleted the old launcher for Minecraft and downloaded the new one but when I launch it. It would show me back to the old launch screen and tell me to install the new one.

Does this issue still occurs to you on newest version of Launcher?
Did you reset your PC?
Did you try to install newest Launcher directly from Microsoft Store?
Is your Windows up-to-date?
Could you provide us with more in-depth repro steps?
