When I leave the world, realm, or server, my mouse disappears and locks in place as if I'm still inside the world/realm/server.

This does not occur/cannot replicate. This is most likely an internal issue within your device rather than the game.
Try using windowed mode rather that fullscreen

Edit: I tried that and got the same exact world
Using a resource pack that doesn't say "Java Edition" would surely make things less complicated!
If the issue still occurs, what is the mouse model exactly?
