Almost every time I've been on a horse since the latest update, it crashes. When I resume the game, the horse, saddle and horse armour are gone

Crashes such as these are now logged automatically, so will be investigated further by the development team internally.
The loss of items is probably a result of the bug reported at MCPE-12347.
