I think, when you push escape, you first shoot the arrow, and then go to the esc screen. The bow will look normal again, and the arrow is 'shot' but you can't see it yet.
Once an arrow is shot, it is converted from an inventory item to an entity. The data is either unable to be stored in an entity (which is unlikely, since you can rename other entities like sheep), lost in the conversion to the entity, or lost in the conversion back to an item when picked up. It does look fairly fixable though.
Not a complete pro at fixing bugs, but since it seems like you're the only one having this problem, can you please hold F3+C for 10 seconds while in-game in order to cause a crash, then post the log here. Mojang likes to know why this happeneds to you, and maybe some other people too. That crash report can help with that.

Boats don't actually store the data of which wood they are made of. Therefore, all boats look the same and drop the same.

Mushrooms always gave off a little light. Don't know if it's a bug though.

This can be easily reproduced by standing on a daylight sensor, with the block above being water at surface level.
