- potato
- carrot
- grass

- cornflower
- every sapling
- dandelion
- poppy
- allium
- crimson roots
- warped roots
- twisting vines
- for the blocks behind, I tested:
- tuff
- stone
- dripstone block
- basalt
- end stone
- block of amethyst
- coal ore
- podzol
- grass block
- place your crosshair like in the image pointing to the insta-mineable and the block behind simutaneously
- make sure, you have nothing in your hand
- start breaking and release before broken
- repeat 1-4
- now the break-animation should still appear on the block behind, even though you released.
I quite often come accross this bug while playing when converting bone meal to carrots or potatos

You probably mean 1.17, as you already confirmed 1.16.5. I can confirm for 1.17. So will there be some intentional game design that can replace tnt duper?

This makes the curse of binding not mandatory, what I think it is. I know, that NBT-Data is ignored but I'm not sure that this is good / wanted. Another implication has this feature / bug: When you try to sell broken armor to the taiga villager, you cannot do it. It would be better in my opinion, if exactly these trades copy the NBT-Data, at least some part of it. So a broken armor keeps being broken and can be exchanged.
OK, "ignore" is misleading. I said "ignore" but I didn't mean that the trade input's NBT has to completely match the exact predefined NBT. With "ignore" I mean, that the NBT is deleted together with the item that is exchanged for. In my opinion, these trades should copy the NBT to the new item, maybe after a grindstone apply. And in case you come with other trades that it doesn't work for, I only mean the new taiga trades. Only there it makes sense.
I think with the torchflower seeds and the pitcher plant seeds, this issue is again there. These seeds aren't turned into compost like the other seeds
I found out, in which version exactly this bug was introduced. In version 1.14-pre5, this bug doesn't occur, in version 1.14-pre6, this bug occurs

thanks for linking! I searched, but I haven't found it. Do you have any tipps in regard to find such a bug? I tried (among other queries) the search query "break" with the filters "Java edition" and "unresolved", somehow it didn't showed up in the results (the results were blank)

Indeed, the graphics card is the reason for the crash. According to https://www.intel.com/content/www/us/en/support/intel-driver-support-assistant.html my drivers for the crashing graphics card are up-to-date. The crashing graphics card is "Intel(R) HD Graphics 4600". Using the graphics card named "NVIDIA Quadro K2100M" fixes the problem. Thanks for your support.
