I think I’ve fixed it it. Here’s what I did..
used the files feature on the iPad to take a copy of the Minecraft folder
uninstalled and reinstalled minecraft
copied the games folder only back into the new empty Minecraft folder
i was able to log back in with my Xbox account and I kept my saved games
