Giant Slayer is currently bugged. Having done the requirement multiple times, it did not pop once. This is tied to the fact that the PS4 version of the game isn't tracking what your character does (why merchants, ancient hunts and other trophies are bugged). I am playing on PS5 and this is still the case there (as it uses the PS4 version of the game). The only workaround is to use your pet to get the kills as that does track.
I can confirm this on PS5 (playing the PS4 version of the game). I tried to earn Giant Slayer multiple times till I found out that it was bugged and had to use the pet for it to count. On the game's subreddit, everyone is using pets for the trophies and things mentioned in this ticket. It's incredibly annoying and should be a high priority fix.
Playing the PS4 version of the game on PS5 has the same results. This issue is also affecting a lot of the game as multiple trophies are bugged because the game doesn't correctly track your character's kills and only your pets.
Giant Slayer is another trophy affected by this issue on PS4/5.
Can also confirm that this has been fixed and has remained fixed. This ticket can be closed.
