Enchanted items will not display what enchantments are on them in their tool tips.
Update: This bug only occurs on items that are enchanted in an enchanting table. If enchants are applied using an anvil they will show their enchant. Using the "/enchant" command does not show the enchantments either.

The problem may actually be that the items aren't actually receiving enchants when enchanted naturally. Rather than the enchants not being displayed.
