To answer to the developer, as other people mentioned as well the lag spikes occur randomly while performing several actions; during my attempts to resolve the issue by playing with the settings, I've had it happen while moving around, while performing actions, while in the inventory screen and while fighting mobs. It doesn't seem to be related to any specific action, graphical setting or other things (weather conditions do not affect the freezing either)
It half-deacribes it, because on top of weird game behavior there's also the fact that it takes half a minute to load the Nether, whereas the overworld takes the usual 3-5 seconds... The issue you mentioned doesn't seem to have the same problem with loading times
Yes It does apparently only affect Android, tried different devices from different brands (Samsung, Motorola etc...) and they all had this same issue. Sorry for not clarifying earlier

Answering to KostasGATE21, I just made a fresh survival world in 1.20.31 and the freeze happened twice in the span of one minute and thirty seconds

Done, it happens on multiple worlds and devices but I attached the survival world where I first noticed the bug, hope it helps
