I have observed this, too. When hitting a creeper with a sword, it used to pause slightly to allow you to retreat. Now it begins moving immediately forward and explodes because you can't get far enough away to untrigger it's fuse.
I have observed this many times, too. Stopping the source block of water when it has been able to spread out into wider flows (like often happens in caves) does not eliminate the water downstream of the source block, like it has in all other minecraft versions that I've played. Clearing out that water requires placing blocks in place of those persistant water blocks.
Lava seems to behave as expected, though, where blocking off the source causes the remainder of the flow to disappear.

Can confirm:
New world, plains biome. Over 3 in-game days, we have seen very few animals, maybe 1 cow, 1 sheep, and 1 chicken. (We can't make beds!)

I believe this is related to (or the same thing as)
MCPE-21856, as well as a number of other hostile mob spawn tickets.
