Hello - I can confirm this issue is also happening on PS5, XBox Series X as of two days ago Oct. 14 2021.
Myself, and two other friends all ran into the issue when we finally got the Iron Golem summoned. We then tried all manner of summoning. In camp, in missions, one summon per mission, summoning in different missions, etc. Nothing worked and we wondered if it might have been related to the October patch that came out.

Update: This has now been fixed for me in the latest update on PS5
