Hitting an enderman with a knockback sword will cause the knockback to be applied after the enderman has teleported.

Are you able to provide a video of this happening? I tried to replicate it but could not. (Some clearer replication steps would help too)
Please provide a video with the debug screen enabled (hit the F3 key) demonstrating the issue.
