Hanging signs can be crafted with stripped logs/stems but cannot be crafted with stripped wood/hyphae blocks. This is different to other blocks such as the smoker or (soul) campfire block which can be crafted with both kinds of blocks.

Hanging signs can be crafted with stripped logs/stems but cannot be crafted with stripped wood/hyphae blocks. This is likely unintentional, as anything (except wood/hyphae blocks) else which can be crafted with logs/stems can also be crafted with wood/hyphae blocks.
