if you use a :can break block" pickaxe
For example:
/give @p minecraft:diamond_pickaxe 1 0 {Unbreakable:1,CanDestroy:[minecraft:obsidian],ench:[{id:32,lvl:100},{id:33,lvl:100},{id:35,lvl:100},{id:34,lvl:100}]}
if you use this pickaxe to destroy obsidian your score wont go up if you have un objective of "/scoreboard objectives add Obsidian stat.mineBlock.minecraft.obsidian"

You typed in the scoreboard command wrong.
Its
Switch the last 2 parts of the command around (stat.mineBlock, Obsidian) and try again.
it did not work I tried
/scoreboard objectives add stat.mineBlock.minecraft.obsidian Obsidian

This increments when a player mines a block. "Mine" is defined as when a player destroys a block in a way that an item !!!!!!!!!Unable to render embedded object: File (could/would drop) not found.!!!!!!!!!!, unless the block does not drop items like glass, or another block would be created like ice. The value does not increase when in Creative mode and will still increase if doTileDrops is set to false.

The problem is not the score or the scoreboard, it's that obsidian blocks don't get counted if mined by CanDestory pickaxed.
Try the /give command and mine some Obsidian, then look at the statistics or the scoreboard.
Works for me
