Stonecutter blade is too dark
The stonecutter blade texture renders darker than it should, it's a similar bug to Java Edition's campfire model having a darker fire in the inventory, but this one is even worse. It's not only in the inventory, it looks like that when placed in the world as well.

However, this issue has been closed as Works as Intended.
The feedback from the team is that this has just been implemented differently.

Please reopen this ticket, I have proof that something is wrong.
If you place the stonecutter facing north/south and put solid blocks on its sides the blade displays the correct shading. See attached picture:
Also, if you place a solid block only on its left, the blade will become even darker. See attached picture:
