I cannot find the IP address for my server, if anyone could help that would be great because I am trying to create an SMP for my friends.

This is not a Minecraft bug, to find your external IP address go to https://whatsmyip.com . Note you also need to portforward in order for people outside your network to be able to connect. See https://minecrafthopper.net/help/setting-up-java-server/ for a helpful guide (portforwarding is at the bottom of the page)
This problem is for bedrock edition not java
