After I had set up a station for testing villager careers, I found that the Career_tag was being changed from the one I had applied to it!
{Profession:0,Career:1}
e.g. >> /summon Villager ~1 ~ ~I had some command_blocks on a clock testing that villager's career_tag. It read correctly until I opened the trade menu with it. When I looked at the output then, it read a different career!
It seemed that the career switching was random (no pattern I could see).
To reproduce the bug? Test a villager's career_tag after you summon it but before you trade with it. Then open the trade window with the villager and test it again.

EDITAlright... I've made some changes to my Villager Testing Lab and now it runs multiple testfors on a clock. Now checking for profession changes, CareerLevel changes, and the career of the villager in the cell.
I set the CareerLevel tag to 1. When I open the trade window of the villager, ++CareerLevel happens (it increments by one).
In a non-spectator mode, I used a timed potion on myself (thrown). I then switched to spectator mode and cleared all effects with -
/effects Bmalchert clear
pressed f5, noticed my spectator head was still emitting particles (though not as much particles as when in another gamemode), and screamed.
Changed to another non-spectator gamemode and particles dissipated shortly after.
EDIT:
When this happens other players cannot to see the potion particles of the spectator, only the spectator can.

Confirm. Same for 14w05b. When in mob view ( e.g. Enderman ), the chunk rendering is not centered on the mob you are "in", only where you first entered the mob's view.
Confirmed for 14w05b.
Reproduce:
1 Switch to spectate 'mode.
2 Open and close inventory.
3 switch to any other 'mode. Observe lack of hands.
Open inventory again in any 'mode to retrieve hands from the gnomes that stole them.
I have just set up something similar after seeing your board. I noticed that the villager's NBT tag Career was changing after I opened the trade window making it totally useless to set the career for any villagers. I hope this is not intentional.
According to 14w05b, you still can spawn green robed villagers. Albeit, they crash the game whenever I try to trade with them, but they still do exist. Here.
You just have to be a little more crafty in your experiments. Those Minecraft programmers are out to fool you.
confirmed to 14w11b.
Threw potion of speed on myself. Changed game mode to spectator. /effect Bmalchert clear. Potion particles still present.
