Bemoty this is pretty similar to a problem we had and I'm not sure if it's duplicate or not. A player in NY realm had an endermite named Pooky and shortly after update Pooky was gone may he rest in peace 🙁
This isn't a bug, try searching online for information about portal mechanics. In the nether 1 block = 8 in the overworld. This makes traveling large distances easier, and also linking multiple portals to the same nether portal over large distances.

This is happening to me with shovel trying to get sand. I need several hundred sand, I'm not about to do 1 block at a time 😑
When it rains, I can't even see around my house because this render is so low. Couldn't even see across a river in the rain to find my home!
Yeah, I didn't really catch that part, but it is always an empty shulker.
This also affected me earlier trying to mine end stone bricks, but not end stone.

Or ya know, just put your thinking cap on and get some frost walker boots and fight on ocean.
Submitted last year and this still happens to us. Very disappointing.
