Woah, this is so weird. I tried this in 20w48a and it still works completely fine, which is not good.
Then, after, if you press q on that same slot, it will drop the item that disappeared. I even tried this where I had the item disappear to be a single item, so when I pressed q on that "empty" slot, it dropped a frickin item.
Yes, this works as intended. Phantoms have no reason to go after different mobs, and they only come out when you (the player) doesn't sleep.

I think that this is just lag and slow internet.

You don't necessarily open them. You right-click with items to put them in and right-click the bundle to let one item out.

/setblock ~ ~ ~ minecraft:block_name

As misterblue28 said, the problem may be that you have traded with them already. In the newest versions, villagers won't lose their profession and "lock" their trades if you trade with them at least once.

Oh no, the mobs had all of your things. This happened to me and my friend before. The mobs can pick up virtually anything, and run away with it.
A few things. For most of them, you did nothing, or nothing thee naked eye can even see. For others, you used older versions of the game where the textures are outdated. Finally, for the observer, it would be the cobble texture if it was meant to I'm pretty sure.

I assume you are using MacOS. To do anything related to f3 and keys that have other intended function, you need to press fn + chosen key.

You can very easily play without a Microsoft account. This is an issue with your system and not the game. We can see the comments you make. It does seem mostly intentional you have to do 1 stack at a time, since they have lots of recipes. What you can do is shift-click to not have to drag.
Also, after watching the video, I have realized this is a severely bugged version of the game. This should not be happening, as it has been fixed before it was introduced. The stack numbers are slower than your mouse, and you get random numbers of items.
This might be happening since water always flows to the nearest hole.

No, no, this is intentional. 16 snowballs is one stack, and bundles hold one stack, no matter the number of items in a stack for the item. For example, you can only have 1 piece of armor in a bundle.

Hmm, this is all signs of lag. All of it. It's all happened to me on servers when they are slow and laggy. FPS can't determine lag, so it must be your operating system or something of that nature.
