I am having the exact same issue - the progress does not save using my existing character. I tried changing the file extension on that .dat.tmp, but it didn't change anything. I'm permanently stuck in my progress to whatever it was directly before the update. Either they can fix this bug, or it's grind time again with a new character.
Open Norton 360, make sure you are looking at it on classic mode, not My Norton. If you are on My Norton, go to settings and change your view, then close and reopen Norton.
Click "settings"
Click "Antivirus"
Click the "Scans and Risks" tab
Scroll down to see the "Exclusions/Low Risks" Category. Next to "Items to exclude from scans", click "Configure [+]"
Click "Add Folder", click the little folder next to the box to browse, and click the grey right-pointing arrow next to your user folder; your user folder should have your name next to a little person.
From the expanded options, scroll down until you see "Saved Games". Click the grey right-pointing arrow next to that.
Click the folder "Mojang Studios", and make sure you have "Include Subfolders" selected, then click "OK".
Click "Apply", and OK, and your Mojang Studios files should now be whitelisted under Norton Antivirus.
