I just logged into my realm from a second computer and the spawn egg recipes and other recipes (such as Elytra) are still in the recipe book. I didn't have time to do more work on the realm but I will try some other troubleshooting and get the information tonight.
I went back in and looked at the behavior packs installed on my realm. There were 2 "unknown" packs that were there. I removed those and now the spawn eggs and elytra can no longer be crafted.

Yes, I was disconnected during the credits before looking for the gateway.
This sounds similar to my state. I was narrating the end credits and got disconnected. Now I don't have an End Gateway.

I have also experienced this in 1.16.201
I'll be able to work around it by making my honey(comb) farm larger, but it still exists.
Still running into this for my bedrock realm after updating to 1.20.70
I always have to re-set player sleeping percentage to 0.
