If a parrot is on your shoulder whilst you leave the End via a portal, the parrot will no longer be on your shoulder when you arrive in the

EDIT: This might also be because of the spawn rate in the Nether itself.

Although its great that the text boxes are now retexturable, it seems that the way they are resized causes issues with resource packs to have very limited freedom in how they are allowed to retexture.

This means that if a resource pack's retexturing of the text box goes at all outside of the vanilla texture's border, it causes parts of the texture to be cut off.
