I summoned some pillagers (with spawn eggs) to see what is happening when they are fighting against hostile mobs. I placed some skeletons too, and a villager in front of them. The pillagers started shooting and they hit the skeletons (that's why the skeletons attacked them) . After the villager died, they started shooting the skeletons. And that's when the bug happened. They didn't changed their looking direction! A skeleton was behind them and the arrows just came from their (the pillager's) back!
I tried to take some screenshots, but that was wery hard (to capture the moment), and I think they won't help a lot.

Sometimes (usually if there were so many mobs) the pillager keeps shooting the nothing after they killed the enemies. They usually reset when they find a target.
There are sometimes blocks looks like they are on light level ~0. They are usually alone, sometimes in rows. Tihs is still happening in a superflat world in full daylight. The more interesting is that they are disappearing, if I'm nearby. This looks like ~ if I'm on the same, chunk, they disappear, but if I'm a bit further they sometimes just come back.

The most of the times just my horizontal distance matters, not the vertical.
I updated a map from 18w43c where I was in creative mode. After updating, I was still in creative mode- I could fly. But the game showed me a survival inventory! After I switched my gamemode to creative (by command) i

If you just place a gloem and a pillager they are fighting but if you cower the pillagers as in the picture the golem can't find them. I tested it again right now.

Affects 21w13a. They still stop at y=0. The ice is sometimes replaced by stone in the cave ceilings (but have ice below and above).
