In creative mode, if you have an even number of a certain stack of blocks in your inventory, halve it by right clicking, drop the stack left in your inventory with strg+q (that's on my german windows laptop, don't know about other types of keyboards, might be command q) and then quickly place back the part picked up, the thing you dropped will disappear when you pick it up. As long as the number of items is even it should happen, only tested with ladders and spruce planks. (difficult to explain, video should be linked as it is too big to attach). I had the same issue when tested in 1.17.1 . Just to add, doing this with an odd number of blocks will not work from what I have seen in my tests.

spent about an hour trying to figure out the problem, thanks for the help
I'm pretty sure if you wait for about half an hour the game will save so if you have made a lot of progress you don't want to lose you might want to wait
I had cheats off, nothing should have been changed so it should have been 3
since finishing my gold farm the issue hasn't been occuring anymore, I can only assume that since my portal is just under the nether roof, mobs could only spawn there and were walking into the portal on their own, sorry for the inconvinience
without more information like screenshots there isn't much that we can do to help
This is not a bug. You do not lose hunger in peaceful to help new players who just started the game. The only way to eat is to lose hunger, therefor you cannot eat in peaceful.
