Whenever you punch a bed, wood plank particles come out of it. Same thing happens when sprinting on a bed (same issue i know).

Confirmed, the bed uses it's bottom texture which is the texture of wooden planks.
This issue applies for a lot of blocks mainly made of wood, therefore resolving as duplicate of
MC-2614
