The bug
Converting a librarian into a zombie villager and back has 50% chance to become a cartographer which is not supposed to happen.
How to reproduce
- Dig a hole 6 x 4, spawn 4 librarians
/summon minecraft:villager ~ ~ ~ {Profession:1, Career:1} - Let zombies turn the villagers into zombie villagers
- Cure the zombie villagers and wait

Check the professions and observe how the villager is a cartographer

When a villager convert to a zombie and back to a villager, only the Profession is keept.
The career is picked randomly when the player interact with the new villager for the first time, so technically, a freshly converted villager is neither a cartographer nor a librarian.
Disambiguation : a Villager with Librarian Profession has two possible Career : Librarian and Cartographer (see wiki).
