MC-606zombies can pick up items while dying
I killed a villager zombie and saw rotten flesh drop but then saw it whoosh towards the dying villager zombie and didn't gain any rotten flesh. I can only assume that the dying mob picked up it's own drop then despawned.

I believe I can confirm this. A Wither Skeleton dropped his skull but the skull disappeared before he died, like in your scenario. However, because it is the same texture it was hard to tell.
I saw this happen just recently while I was killing a zombie. Luckily, all it dropped was rotten flesh so it didn't destroy any rare drops.
This happened to me as well, I actually saw the flesh in the hand of the zombie as it was lying down just before it poofed into smoke.
