There is a Mexican Spanish language; however, there are many items, blocks and texts whose translations are more appropriate for Latin American Spanish. This language is incorrectly called Mexican Spanish when it should be Latin American Spanish.
The same thing happened with Minecraft Dungeons and Minecraft Legends (although I'm not sure if the same translators who take care of that game also do it with these games): MCD-7323 and MCLG-377.
Some examples I have collected (I will add more as I find them):

The same thing happened with Minecraft Dungeons and Bedrock Edition (although I'm not sure if the same translators who take care of that game also do it with these games): MCD-7323 and MCPE-164185.
Fixed with the Season 3 update and is now referred to in-game as Spanish (Latin America).
The bug has not been fixed (see attached images).
