GUI disappearing on Realms (probably caused by fences)
On the realm I play on while I was building a roof all my game GUI disappeared, including d-pad, hotbar, chat and menus. Also all entities disappeared, I only saw the circular shadows underneath them. I was only able to see blocks and (no idea why) the item I had in my hand. After relaunching Minecraft it was fine for a few seconds, but after I started walking it happened again. I broke a few fences, then relogged, it was OK, I was able to chat, but I better didn't move. I asked other people that were online for help and they destroyed most of the fences, trapdoors and fence gates that I used in my builds. Then it was fine. I think it's caused by fences (I had over 4 stacks of them used in my builds), maybe also by fence gates or trap doors, possibly stained glass. But I think it's fences. It only happened to me, the person that helped me breaking fences didn't have any problems with GUI disappearing.
The same thing happened to me on a different realm back in 1.0 version, also in an area where we had tons of fences.

Joe Smith: A helper noted that your issue MCPE-28426 is a duplicate of this one because all the specific cases you listed could be the result of this issue. However, your assumption that mobs were spawning at too-high light levels would not be covered, so we need a test case that demonstrates that. I updated MCPE-28416 to request a clarification. Please answer there.
This issue is specifically about spawning on transparent or non-solid blocks, and as far as we know that problem has been fixed, so this ticket will remain closed unless a counterexample is reported.
I ran into the same problems on my kindle fire a few weeks ago. After extensively exploring the outer parts of my world for about a month (and significantly increasing the memory size as a result, about 382 MB), I ran into the exact same problems. My world would load properly, and would remain OK as long as I do not move or if I move a few blocks at a time. But as soon as I moved more than about 5-6 blocks at a time, all of the problems you encountered appeared, including the sun disappearing. The GUI and the hotbar would still work, but you could not see the controls. The chests would also disappear, but you could still access them but not see their contents. I was not building any fences when I encountered this problem.
Thank you for your report!
