I'm also having this issue, first time happened in the Redstone Mines. I managed to get a screenshot while video was freezed (the Switch was responding).
The background music was still going, video was frozen and I heard some of the mob SFX, though they weren't moving (in the background).
After 10 or so seconds, the game jumped a little forward in time, not for the total duration of the freeze but maybe half a second worth of game.

I can confirm this on Nintendo Switch.
I was going to post that the issue went away when I docked the Switch
(it crashed at the end of the level tho).
It doesn't seem to happen to me in offline mode. @Wesley have you noticed if it's worse while playing in online mode?
