Unlike in Java Edition, the piglins in Bedrock Edition dont seem to stare at each other.
After checking the Piglin.json, I realized that the component minecraft:behavior.look_at_entity is missing from the piglin, and seems to be limited to evokers, ravagers and vexes for some reason.
Expected Behavior : Piglins should occasionally stare at other piglins, not just at the player or just randomly.

Projectiles go through the perched Ender Dragon instead of bouncing off.
When the ender dragon has descended to the center and now is immune to
projectiles, projectiles will go through the ender dragon at this state instead of bouncing off as expected.

In Java Edition, all four limbs of the camel alternate along the ground naturally. Whereas in Bedrock edition it doenst feel as natural, and feels more as though it is sliding across the ground.

REALLY hard to reproduce this with consistency, but occasionally creepers dont blow up immediately after it has turned white and finished charging up. Causing you to accidently let down your shield and blow up. Video attached below.

Appears to have been fixed as of 1.21.50.28. It has now been changed to '벚나무 매다는 표지판'
All the other Cherry Blossom related items should have their names changed to have '벚나무' in their name instead of '체리' (Such as '체리 문' for Cherry Door to '벚나무 문' for example). As '체리' refers to fruits of specifically the Western species of Cherry Blossom trees.
Or...they can just copy Java Edition's translations for their names.
