This may be due to the controller not the game "joy-con drift" is common try a different controller
can you send a screenshot or something?
you can also go to Settings > controller. then up the dead zone of left stick
you can also record your screen if you feal a screenshot won't work Press Win + alt + r to start/ stop recording videos well be saved to C:\Users
{username}\Videos (you may need to install xbox game bar for this)
it's possible you have corrupt data to fix/test this close the game > go to system settings > data management > manage software > minecraft dungeons > check for corrupt data.
