If I craft a firework rocket and use it everything is fine, but if I try to use it in adventure mode, it doesn't work.

However, this issue has been closed as Working as Intended.
This is the same in the Java version (MC-129470).
You can add an NBT tag to given firework rockets to make them usable on certain blocks, however. If you need help or have a suggestion you might like to follow the community support link below.

The firework needs the CanPlaceOn tag in order to be used on a block.
