Please, mark this as fixed at 20w27a/1.16.1. I accidentally typed it and it works normally, even without the resource pack.
[Mojang] Grum (Erik Broes) , are you sure you did it correctly? The MC-169319 resourcepack does not seem to work.
The bug
Minecraft font doesn't include the ˇ diacritic (caron) as standalone character, but includes letters Č, Ď, Ě, Ň, Ř, Ť and Ž.
VERY IMPORTANT:
This issue is not a duplicate of MC-169319. That one speaks about a different accent, which has already been fixed.
