Swimming and doing certain actions make the player look very odd/does not have animations for swimming + doing certain actions
When you swim and do any sort of actions (charging a bow, crossbow, trident, looking through a spyglass, or using a shield) because the player is already in the swimming animation. It won't break the player's swimming animation and play the proper animation of those actions listed above. (make the player stand upright). Instead only the held model for the item is changed. (Tridents are flipped upside down, because the normal trident animation raises the player's arms in a way which would make the trident appear backwards if it didn't flip. Shields and spyglasses would move slightly out of the player's hand as well to align itself with it's proper animation. Bows and crossbows would appear being pulled back but the player isn't pulling it.)

Before version 1.17, this problem did not arise. I have included two comparison videos for reference. It is probable that it was introduced by the fixes implemented for issues MC-176614, MC-203602, MC-204424, and MC-205228. bug.mp4
bug not in 1.16.5 yet.mp4
This problem impacts a range of items, including eyes of enders (due to MC-107185), shields, spyglasses, as well as all food and drinkable items and tridents. Conversely, items like bows or crossbows deliberately alter the pose of the opposite arm too and remain therefore unaffected.
Edit: As it turns out, the problem did not arise in version 20w48a but rather in version 21w13a. It is probable that addressing the issue outlined in MC-200001 has led to the emergence of this bug.
