This bug isn't exclusive to polished blackstone slabs, stairs and walls. Slabs, stairs and walls cannot be crafted to their brick/cut/polished variants in stonecutter at all. May relate to
MC-143077.The stonecutter is (as of right now) just a shorthand for crafting; you cannot craft the slabs into the brick slabs either. I think this is an intentional design choice.

In 24w12a, it's notable that stonecutters cannot transform regular stone stairs and slabs into their brick counterparts. Furthermore, stonecutters are unable to convert any slabs or stairs into other variants.
