Can not sign in in Amazon Freetime
It appears that for most users this issue is due to the Amazon device's default permissions settings for child accounts. In order for Minecraft to sign in and access user data, you will need to allow storage for Minecraft. From this comment:
You need to be logged into the child's account. Drag down from the top and click the cog for settings and then put in your PIN. Then click Manage Storage - Internal Storage - Apps & Games - Minecraft. Then click on Permissions and toggle that setting to on.
This permission may also need to be enabled from the adult profile's settings for the child's account. Please comment below if allowing storage does not resolve the issue for you.

I believe that this is caused since on a kids kindle fire tablet, the web browser is disabled with no way to enable it and to log into a microsoft account it requires use of the web browser and therefore rejects it. Something was presumably changed in the latest update to effect this.

My children anxiously await a response
I started that Reddit Post, and want to reiterate here that this is a widespread issue. It seems to be more on the Amazon side of issues, with it's locked down Freetime mode. But, it WAS working fine before the update. Somehow, Minecraft was able to call the Silk browser to open and able to login to Xbox for Minecraft.
Please look into this! If we can't login.... we can't spend our Money in the game.
If I had only know this before multiple re-installs and then a whole factory reset.
It's defo just the child profiles because it prompts me in adult profile and it works ok. There are overrides you can do in child to add certain webpages but still not working. Please fix ASAP as it used to work before latest version.
I tried enabling web browser access for my child on Freetime, thinking it was due to no being able to open a browser, and was still not able to progress the issue.
Have voted for this and am watching to hopefully find a solution.
Same issue on a new Fire bought today. Still works fine on the previous Fire we had already signed into.
is seems like its because it has no storage permissions or contacts permissions. giving minecraft those permissions fixed it
edit: it seems like it only needs storage permissions.
@clifton I don’t know how to do that in FreeTime
On the kids profile go into settings, manage storage, apps an tap on minecraft and then permissions and tick the two boxes.
Mine didn’t work straight after that, I did a force close on the app as well and it worked after that.

That also worked for me thank you. For the record I only enabled the Storage permission. When I did that Minecraft was able to recognize that we had previously been logged in and it used that account. See, we got into this mess not because we signed out but because we simply updated. We were never signed out, just that the updated version was never able to read from storage that we were signed in
thanks again. There are likely lots of kids who will not see this though. I hope Mojang makes a more formal announcement or pushes a small update that can check for or prompt for permissions
No luck on my end, likely due to all the previous troubleshooting attempts, including uninstalling & reinstalling. (It's also not a solution for new Amazon tablet users.)
Following on from @clifton carey's post...
I had the same issue, not being able to get my boys back into their Minecraft accounts after buying them new Fire 10's. Their old Fire 8's were still logged into Minecraft!
I was worried that as they were new devices, changing the app permissions to allow access to the device storage would not make any difference as the tablets had never been used to log into their accounts before. However, when I set up the new Fire 10's I had used a backup from each of their old devices and so wondered if any previous login data might have come across from the backup.
It seems to be the case, because after allowing the app access to storage, doing a forced stop and rebooting the tablet, I was able to get them logged into their Minecraft accounts no probs.
When I was in the login process there was no indication that it was using any old data - ie, it didn't autofill or anything, so I can't say for definite that because I've used a backup to set the new tablets up has allowed me to sort it. It may just be that allowing storage permissions deals with/gets round the problem somehow. That said, I note @Katharine Abrahams-Munroe's post. Has anyone with a fresh tablet managed to get logged in after enabling storage permission?
The workaround suggested above unfortunately did not fix the issue for my son's fire tablet. Both permissions were already ticked. I unticked them, restarted tablet and then re-ticked the permissions options but issue still persists. As Ryan mentioned, it seems the issue does not occur on older fire tablets as my other son's fire 7 has no issue logging in with his microsoft account.

Got similar problems, but permissions workaround has not helped me.
Can't sign in (not that I want to). When try to create new world (vanilla settings), immediately says "There was a problem loading this world".
FYI I think the resource pack seems to download ok.
Kid has been using Minecraft on old Fire 8in for 2 years no problem. That tablet has now died!
This happens on his new Fire10 Tablet. Works ok on this tablet in my adult profile, but not in any kids profile, including brand new ones with no knowledge of any previous settings.
Wasted 1hr+ of my life with Amazon support - just reboots and resets. Hoping the real experts can help us here!
Update: I have now got it up and running using the permissions fix - after I had read it properly and changed the permissions in the kids profiles, not just the adults!
I agree that something should still be done about this as it is very obscure - I have spent several hours researching this today and very nearly gave up. There is a note about permissions on the app purchase description, but most mortal humans are unlikely to make the connection.

Bought an Amazon Fire tablet 10HD for my son for Christmas. We set it up yesterday and bought minecraft from the Amazon store and it will not play under my sons kids profile - same issues as discussed here. Works fine under adult profile.
We have tried everything detailed here, online and other things, but it will not allow him to sign in nor create worlds/play the game at all.
Things tried so far:-
Spent over 5 hours trying to sort it yesterday and at our wits end - he is not a happy bunny right now and I would appreciate any help.

This storage permission fix still does not work for me, the game just hangs up on the "Signing in with your Microsoft Account" screen endlessly. Are there additional steps? Please address this, it's so disappointing, thanks!
I have tried adding the storage permission, and minecraft still will not work. Sometimes it hangs, sometimes it gives error codes, but mostly the kindle returns to the home page, like minecraft is crashing.
One thing to note, trying to add all of the domains to the freetime browser that are involved in login is not possible. For login.live.com I get the message "Amazon Kids web browser does not support this website." Perhaps the webview is preventing minecraft from reaching the login page?

Had similar issues. The problem is as @Paul Golin and others mentioned: the new Amazon Kids experience restricts websites.
You cannot add the Microsoft Live login sites. The solution is to unrestrict websites, and use the NEW filtering mechanism as follows:
Keep in mind, you just unrestricted the web browser: it now can visit anything on the web. There is an option to add restricted sites, but it's a allow-by-default.
Once you've signed in to Minecraft, I believe you can switch it back to "Hand-Selected websites & videos". But if you ever get logged out, you'll have to repeat steps 1-5 again.
