The villager looks at the space 1 block above its job site block (+1 Y) while working.

Apparently the villagers aren't directly looking at the "workstation blocks" and they should be looking directly similar to how Librarians inspects the bookshelves.

@Bernardo Gomes Negri: I believe the video does show the weapon smith working at the composter. You can tell by the way he turns his head toward it with a slight downward tilt. Villagers in Bedrock Edition do not look directly at their job blocks per MCPE-43207.

About the clerics looking at the block above their brewing stand, that's actually always the case for all villagers: MCPE-43207.
In my understanding, villagers aren't directly looking at the block, and somehow they are look straight to nothing. I don't know if they were meant to be like that, but I think it needs to be fixed.
When I saw the last snapshot there, the villagers when they were working on their unit.
@David Well it seems that they do look directly at their workstations, tested this on the Java Edition. I do have a screenshot of it. Librarians don't do this if they are inspecting bookshelves.
From the most recent picture added, it looks like villagers look at the block +1 Y from their workstation:
