Plants don't cause an update when the block beneath is broken/light level changed
If you are to place a sapling on dirt then a carpet block on top and destroy the dirt NOT the sapling (dirt under sapling), the carpet will float. This doesn't work with any other block that gets destroyed when below block is destroyed. ONLY PLANTS WILL WIELD THIS EFFECT (except cactus)! Nothing else works.

Resolving as duplicate of MC-19886 because the cause is the same; namely that the plant doesn't cause a block update when it pops off.

Works as intended? Please tell me you at least checked the video... The crops are not causing a block update AT ALL when they pop off (unless you punch them), which means sand, gravel, anvils, or carpets placed on top of the crop will be left floating when the crop 'pops'. The dirt can then be removed to create floating blocks anywhere you like. Now that I look for that bug, I see it's posted and confirmed already MC-19886 but that is just a side effect of the broken crop behavior.
It is at least an exploit. I don't think you're supposed to have such a wheat farm. Yes, it might be MC-19886 again, but the situation you described it with, but I think this kind of wheat farm is not supposed to be working.

The bug I reported is not the same one. MC-19886 is « Plants don't cause an update when the block beneath is broken/light level changed ».
Mine is about plants not being updated by placing blocks around them and changing light level.
Your issue has already been reported. However, all these are duplicates of MC-19886.

Also happens with tall grass.
Works with all blocks which drop if the underlying block is destroyed and as long as no block update besides the carpet happens.
I've gone and tested more stuff and it appears only plants do this to the carpet, except cactus. Nothing else will wield this same effect.
It also works if the bottom carpet is destroyed by liquid but if the liquid is removed from where the bottom carpet was, the carpets will fall
that's because carpet floats on water.
