The splash text in the main menu no longer alters upon pressing ESC, unlike before.
Since 24w09a, pressing ESC to access the multiplayer menu or options menu no longer triggers changes in the splash text. This was an intentional feature MC-13118.

The issue has been addressed in 24w09a following menu adjustments. This bug impacted all menus that previously altered the splash text upon exiting. Unfortunately, the functionality of changing the splash text by exiting menus has also been removed, as confirmed intentional per MC-268931.

We're actually already tracking this issue in MC-268931, so this ticket is being resolved and linked as a duplicate.
However, that ticket has been resolved as working as intended, which means that this will not be fixed as it is not considered a bug.

As per MC-268931, the splash text not changing from the multiplayer menu is working as intended. However, I reopened the report and swapped around your expected and actual observations to highlight the inconsistency within the singleplayer world creation menu, which seems valid.

After consideration, the issue is being closed as Working as Intended.
Please note, that mechanics of the game may change between updates.
Things such as graphics, sounds, world creation, biomes, redstone, villagers, and animals may not work the same in current versions.

I understand that you're the one making decisions on what's intended, but I'd like to point out that this change considerably complicates the process of trying out multiple splash texts. Currently, the only way to change the splash text is by restarting the game or entering and then leaving a world, which is time-consuming. I recommend adding a button to facilitate splash text changes instead.

While my comment includes a feature request, its primary aim is to elucidate how this newly intentional issue affects gameplay and overall player experience. I might consider posting the suggestion of adding a button on the feedback site. However, it's worth noting that the feedback site is disorganized and poorly moderated. Posts are sometimes deleted without valid reasons, and duplicate posts are scarcely addressed. Consequently, there's a slim chance that Mojang will notice your post. Therefore, sharing ideas in comments on the bug tracker can also be beneficial, especially if the suggestion isn't the sole focus of your comment.
