What texture pack are you using? Some texture packs intentionally remove these things
the default of minecraft with some edited textures but the donkey is still the same as the default
When using the new downloaded texture pack from the Minecraft website, some of the textures ad to be changed...
However, I had a white horse and placed a saddle on it, and the top part wasn't seen (only the straps were seen), meaning I still have to do sm modifications to the texture pack.
No, Reporter's right. I also have same issue. It's not due to resource pack as previously (1.5.3) it was showing ears properly.
For those still affected, please add:

I saw a donkey with its ears missing in a normal survival world with no texture packs.
I minimized the game then came back, and the donkey's ears were back to normal.
I attached a screenshot.
I am on windows 10. Using version 1.6.1 of Minecraft.
I, even if I minimized the screen, the donkey still has no ears, it only happens when I have any texture pack
this problem happens to me from 1.6.0.1 until now 1.7.0.9
This issue is still present in the 1.8 betas tested with PureBDcraft on Xbox and Windows 10.
On initial world load horses/donkeys lack their ears and saddles when the texturepack is using the horse models (as opposed to the newer horse2 models).
Saving the world, and reloading it will cause the models to render correctly (i.e. the ears and saddles will appear correctly).
all of my donkeys look weird now without ears lol
Have you tried a full reinstall of the game?
Backup any data you don't want to lose, then try the following:
Sometimes a clean install of the game will help with these kind of issues.

Tried fresh installing. Sadly it didn't change anything
Confirmed the issue myself. Still happens in Beta 1.8.0.14... I assume a fix with the PureBDCraft texture pack might fix the problem.
EDIT: The problem is easily fixed by adding a Global Resource other than PureBDCraft that changes the model of Donkeys.
It does it with other texture packs too!
Maybe I wasn't clear with my previous comment, so I'll try and offer a more detailed explanation.
There are 2 horse/donkey models in Minecraft Bedrock: horse and horse2
horse is the old style detailed models with mouths, and extra bits for legs. horse2 is the newer more blocky, less detailed models.
Resourcepacks such as PureBDcraft, amongst others, are using an older pack version which allows the old horse models to be used.
What appears to be happening is the game just isn't pulling in all the parts of those models during initial resource loading, so the level loads and resources load, but for whatever reason it's missed parts of the saddle and the ears (and other bits).
When you save out of the world, and then reload the world the resources then load correctly. No amount of reinstalling is going to help, it's an issue across multiple devices which is obviously baked in to the code. Likely a bug created when the newer horse2 models were introduced.
The fix here is not to just tell resourcepack makers to use the newer pack version, mainly because no guidance from the people who process the submitted packs to marketplace have stated it's necessary (I work on PureBDcraft, so I know personally).
If the game is to keep both models, this issue needs fixing. Otherwise the devs/people who process packs need to update their guidance with, quite possibly, a deadline for packs to update to the horse2.
This issue really needs to be pushed upstream to someone who can actually make a decision about the future of the old horse models instead of being left as obviously buggy code.
Thanks for the extra information, I was able to reproduce this after using the aforementioned pack. I was also able to add more information about the reproduction of the issue described at
MCPE-31995.I'm having the same issues and they are on Xbox and Windows 10. With the saddle, the top main part is always missing but on some, one or two of the stirrups are missing and the donkey ears are missing as well. On Android/Tablet though, neither of these problems are present.
Can anyone reproduce this in 1.11?
Whilst I find it too fiddly to unenroll from the beta (and actually get back on stable – it'd be nice if beta and stable could be seperate for resourcepack makers
) I can say it seems fixed in 1.12 beta.
