This is intended. The piglin's crossbow is loaded, so it should hold the crossbow with two hands.

Isn't this a duplicate of MCPE-75973?
This is most likely a bug in Bedrock, MCPE-75973
I removed pillagers as pillagers putting their crossbows down is being tracked as MCPE-65455.
Confirmed in 1.16.0.63. Piglins will never put down their crossbows after attacking.
