Dying (elder) guardian hitboxes will still apply thorns damage when hit
Thorns damage will still be applied when hitting (elder) guardians while they're dying.

MC-1246The reason I stated this as related was because these both involve attacking the hitboxes of dying mobs, but this ticket states a similar bug that is caused by
