I named a slime and gave it 1 point on the scoreboard and the it has "a4fcf315-725b-4808-979a-4a36c903d1da" on the scoreboard rather than its name.

I think this should be reopened. It makes no sense that mobs display their UUID in the scoreboard, but use their name everywhere else.
KingSupernova Think about this: 7 zombies named Steve would confuse everybody who looks at the scoreboard, and would probably break it.
It certainly wouldn't break it, the UUIDs would be used internally. It may be confusing, but that's the choice of the person who names them all Steve. And it would be better than the current long strings of random letters and digits.
