Wither and its health bar sometimes disappears after the player moves away and returns
The bug

There are actually a variety of bugs with withers when it comes to unloading them, dying and unloading the wither is what causes this invisible/immortal bug to happen.
To reproduce:
1. Create a normal world, hard, cheats on, simulation distance 4, and whatever else you like.
2. Lower your render distance as much as you can.
3. From world spawn go about 200 blocks past the furthest thing you can see from spawn
(we want the wither to be completely unloaded, out of render distance even)
4. Once you have found a location, spawn a wither and damage it to just over half health.
5. Once the wither is slightly above half health, do `/kill @s`
6. Slowly fly back to where you summoned the wither, and you will see it have the summon animation again. Hitting it a couple times should cause it to "die" but not play the actual death animation. After this, if done correctly you should have an invisible immortal wither.
7. Summon some chickens around to have the wither target them to prove it exists.
Optional: Set an always active repeating command to do `tp @e[type=wither] ~ ~3 ~`
and you can attempt to kill the wither using what ever means you like, its truly immortal.

Could you upload a video of the bug occurring, and add steps to reproduce the issue? Could you also check that the difficulty is set to Easy or higher?
I'm actually suffering from this same issue. I'm running a world on a Realm, we just spawned in the Wither, the fight was able to go okay for maybe 5 minutes and then the health bar vanished but the Wither was still visible. After knocking the Wither down to the second stage where it killed me for the last time before the bug happened the Wither literally vanished but continued to hurl Wither skulls at anyone within range.
Every time anyone returned to where we spawned the Wither we were able to see the Wither in a pure white skin as it hurled Wither skulls at us. We were able to watch said Wither appear to "die" or "despawn" and from that point on Wither skulls would be hurled from an invisible enemy. Every time we died it would put in a death message that we either withered away or were blown up by the Wither. All of our gear also vanished after the first death from the period when the Wither had gone into its second stage–even though it took ten seconds to return to the spot where we died and the moment the Wither glitched.
Also discovered the day/night/weather cycle broken in synchronous with the Wither resulting in day/night/weather cycle still appearing to work visually, but no effect on the world as a whole. Mobs would spawn as if night and would not suffer damage even if the game visible showed day.
Only packs loaded in are a texture pack, Chroma Hills HD. Nothing else added, no cheats allowed, pure 100% survival world because we as friends wanted to get achievements together.
It looks like there are several issues at play here:

The extra issue that this ticket mentions are related to the Wither health bar disappearing, and that the Wither will turn invisible.
Does the issue with the wither turning invisible only happen on Realms, or can it happen in a local single-player world with just the vanilla textures?
Can confirm that all the information in aces comment is accurate, and this exact bug (and many other similar wither bugs) still affect 1.9, realms, windows 10, and xbox one!

That all sound confusing? It is. Took forever to figure out, and is hard to do in single player. Much easier on a realm with the minuscule render and sim distance.
I made a full video on this exploring all the bugs that happen from simply unloading the wither, if you are interested, watch it haha. Yes I seen it it'd really gamebreaking
Was able to reproduce on beta 1.11.0.7 on Windows 10; for me the wither was under half health, and moving away/coming back caused it to show the death animation and turn invisible (while still attacking mobs). Relogging fixes the issue but causes the wither to show no wither armor.
I can attest that this is still an issue. I've been trying for the better half of a day to fight the wither and every time I die the only option is reloading a copy of the world because it no longer has a health bar.
I am also have the invisible/invincible wither issue on a survival realm. We shot the wither with arrows until half way and finished it off with a sword (though the wiki only specifies the wither is immune to projectile attacks in Java, the bedrock section does not say this is also the case).
The wither’s healthbar will show up empty as if one hit is needed. If an arrow is shot at it, it disappears with white particles like how other mobs die. The healthbar disapears too. However, we continue to get blasted with skulls and can still hear the wither. It has blown up half of our map now and we’ve run out of resources. I’m starting to believe it cannot be best. We use version 1.11.1 Bedrock. The realm owner uses an Xbox One.
I also experiences zombies and phantoms not being affected by day light after the wither spawn.
I wanted to add, arrows are our only method of attacking it because it escaped from a small cave at coordinate 25 and flies too high in the sky for us to use our swords.
This is still a massive issue in the 1.11.x updates, this really really needs to be addressed!
This is just insane, i had to just quit and leave the area. Imagine if I spawned him close or under my base... It would still be there
Confirmed in 1.11.4
And also I have to say that wither can become invisible/invincible in phase 2, you will come back to him after die or go far; you will see its death annimation and after that it will become invisible and just keep attacking you or stuff, but you can't deal any damage. The only way to restore it is just keep near wither -> save & exit -> load world again and you will be able to continue fighting wither.
Confirmed. Used the long tunnel method, the wither did not follow me so I had to brave being exposed to it, it killed me then when I went back to it the health bar disappeared. Hopefully when I go back I will be able to fight it properly or I will lose hours of hard work that I've put into my world, not good.
Basically on Hard Mode the Wither is impossible to kill on single player unless you have a bunch of totems of undying which I find kinda stupid because it means it's WAY too hard. Even with full blast prot, you can't even get near him without using at least 2 totems of undying (which can be pretty rare unless you build a raid farm).

Filipe Lucas: Your video doesn't appear to show the same bug as this report describes. Your video shows the health bar disappear, but the wither is still visible and in fact is not far away. In addition, this bug was closed 8 months ago as "Fixed" and that status wasn't challenged by any of the dozens of players who were experiencing it, until now. Therefore, it's very likely that this bug was actually fixed and the one you're reporting is something different.
Please search for a report that is still open and that describes your issue more closely. If you can't find one, feel free to create a new report for your issue. Be sure to attach your video (it suggests to me that the wither's health bar disappeared when you opened your inventory, which might be a very helpful clue), but please also describe the issue carefully in words. When you only provide a video, we can't tell which events in it seem significant to you.
