@stephanie astro thank you for the update. There is another bug where after you kill a villager, another can link to its workstation without changing profession. This makes them unable to work or link to new workstations (unless you zombify and cure them). Take a look at the first 5 steps under MCPE-56889 (or this comment on MCPE-62080) and see if that applies to your survival world. If you break and replace the workstations after the villagers have grown up, they should link.
For your test world, it's normal for villagers spawned by spawn eggs to start with random professions. (If you think that's a problem, add a vote to MCPE-46034.) Villagers not picking up food is usually due to either their inventories being full, or mob griefing being turned off.
@stephanie astro: Thanks for retesting. Since you say you can't get villagers to breed or iron golems to spawn in your test world, I wonder if you have "Mob Spawning" turned off? I've made that mistake trying to test villager issues.
@stephanie astro Villagers working at the wrong workstation is tracked at MCPE-56889. This is actually an important clue to what is happening in your test worlds, and possibly for other users who can’t get iron golems to spawn. When a villager that is linked to a workstation gets removed from a village (either by being killed or by being timed-out while in unloaded chunks) unemployed villagers will link to the newly available workstations incompletely. They do not change profession and do not work, but they tie up the workstation. If you have enough villagers like this it will prevent iron golems from spawning because of the new work requirement in 1.16.
MCPE-62080 is also related to this problem.

All villagers have a linked bed and workstation. The village leader is known and linked to the bell.
Each workstation is in front of the villager in one farm and villagers have free movement to pathfind in the other.
I have watched countless videos and have continued adapting according to latest instructions for bedrock versions. As I said, initially golems were spawning but in both cases this stopped once I had unloaded the chunks.
Named fish despawn too.
Also, twisting vines are despawning once chunk is unloaded.

Derp! Yup...sorry.
Not sure how I would have known this is a ghost block issue. In that case , no twisting vines are being placed at all.
Ps..I searched twisting vines....
Thanks. Btw, I can place more vines on top and climb to build limit on them, presumably this fits hhost block identity.

I have invisible cats. Only showing their shadow. It fixes when logging out and back in but it's happening fairly regularly.

Same here.
Villagers traded with have locked up because they have unlinked from their work stations. I have tried breaking work stations and resetting. Breaking beds and resetting. Moving them to nether and back.
Also, villagers that have not been traded with at all have been getting stuck in trades once linked work stations are broken.
I think this has much to do with zero iron golem spawns.
Happening also during light changes at sunset (Android) shaded areas completely dark. Logging out resets or updating blocks. Things like shulker boxes can seem invisible.
No texture packs. Vanilla through and through. No shaders.
Tested in creative Android and they seem to take damage there. Have you tried testing in creative? Maybe take some screen shots if poss?

Tested both survival and creative. Painting placed. Invisible but can be broken and retrieved. Previously placed paintings in world also invisible.
Yup. Android. So much lag here on latest update. Jittery on trains. Rendering non existent on flying. Damage lag on fall impact.
I must say I had the same issue with a hopper. Bottles popping out all over the place, anywhere but the hopper.I think (finger's crossed) I have resolved the issue with a hopper minecart but it has to be raised on tracks.

I'm presuming this is linked. Villagers are breeding despite sufficient lack of beds.
I have one bed..which is visibly linked to a farmer..observed sleep etc. 4 other villagers.
No other beds within distance to link to.

I haven't yet seen this happen in the latest update. Hopefully, it has been sorted by another intentional fix.

Tried to move beehive with campfire below (as I have done countless times before). Bees hostile.

My jukebox has never played. Tbh I thought it was my settings. I have adjusted everything. Moved jukebox so that nothing is touching sides. It's playing animations but no sounds. All other minecraft sounds play normally.
Well that's all sorted then, thank you. I can now make use of my record collection.
Still not working, since villagers are still not working.

Survival world 55 beds 55 workstation freemovement to pathfind 200 blocks up yaxis not linked to any other village: killed all villagers not linked to bed and workstation.
Bred villagers. New villagers linked to beds but refusing to take any workstation at all when grown.
Testing World:
30 Beds.
4 villagers, 2 workstations.
Villagers spawned in by egg.
All 4 took up trades before any workstations placed. 2 workstations placed. Work taken up. Trading with 2 working.
No bread taken up by any of 4 villagers.
No breeding by any villagers over a period of 10 minecraft days.
Android latest Beta..latest Android.

Survival Y200
After a lot of killing villagers and moving things around I finally have: 47 beds, 47 villagers linked to beds and sleeping, 47 villagers linked to workstations and working.
They do switch both beds and work stations frequently but since my set up allows path finding, this is not an issue.
Test World:
31 Beds, 30 Spawned Villagers all linked to work stations. Simply cannot get them to breed! ( not in peaceful or creative mode.)
No Golems in Either.
Survival:
If beds are floating, all bred villagers will unlink from beds and stop pathfinding. Slab under half bed resolves this.
Testing world:
Iron golems will spawn for egg spawned villagers.
Egg spawned villagers won't breed.
Cured Zombie Villagers not breeding and working at stations not allocated eg weaponsmith working at composter.
Testing continues...
And in v1.21.51. No spawns below 0.
