We can only track one issue per ticket, so I am revising the summary to focus on the linking problem you had. Cured zombie villagers starting with XP and locked into professions is being tracked at MCPE-48712. Villagers spawned by spawn eggs or spawners having random professions is being tracked at MCPE-46034.
I believe it is intended that villagers have to be in a village, defined by at least one bed linked to a villager, in order to link to workstations. However, I have not found an official statement of that fact. The 1.11 changelog only says
- Villagers now sleep in beds
- Villagers now visit their job sites during the day and go home at night
@stephanie astro thank you for the update. There is another bug where after you kill a villager, another can link to its workstation without changing profession. This makes them unable to work or link to new workstations (unless you zombify and cure them). Take a look at the first 5 steps under MCPE-56889 (or this comment on MCPE-62080) and see if that applies to your survival world. If you break and replace the workstations after the villagers have grown up, they should link.
For your test world, it's normal for villagers spawned by spawn eggs to start with random professions. (If you think that's a problem, add a vote to MCPE-46034.) Villagers not picking up food is usually due to either their inventories being full, or mob griefing being turned off.

This is a feature, not a bug. You can change their naturally spawned profession by making a village (literally placing a bed down next to the villager) and placing a profession block of the desired profession. If you wish to get them unemployed, simply break the profession block after placing it down.
Although this site is supposed to be for reporting bugs and not as a forum. I have to agree with Bernago here. Even if this was a "bug," (Which you aren't allowed to report bugs based on the disparity between Minecraft & Java Edition) there is an easy workaround to it. Plus, I have already seen multiple Map creatures that utilise this function on the Marketplace (i.e. Raft Survival). Changing this would break the maps which could have undesirable consequences.
I am still experiencing this on BE via Windows 10 despite ensuring there are enough beds for a new villager to take whether they are spawned in via command or egg or if they are bred by the villagers within the village. I have also been experiencing villagers spawning in with a profession and then swapping to another profession that is not present (such as a butcher or a shepard). If Java is experiencing similar issues, then this is not a feature, this is, in fact, a bug and one that requires fixing. This jeopardizes the creation of trading halls and the ability to create fixed professions within player made villages and these benefits were made prominent by the Village and Pillage update.

Can confirm on Android in 1.16.201! This also happens when you summon in villagers using /summon.
