Sea Pickles will act normally if you place them in a water source block. If you place them in running water or underwater in a non source block of water it changes the water to air. If it's one block deep the water just disappears. If you are underwater it creates an air block as big as the pickles.

Edit: This is probably related to turtle eggs and pickles blocking lava and water from flowing (MC-128001).

The bug
All blocks that can be waterlogged cannot be destroyed by flowing lava. This is certainly intended for water, but introduces illogical results in some cases when applied to lava. This is because plants that can be waterlogged and otherwise burnable blocks such as hanging roots, rails, signs and scaffolding can hold lava, at least momentarily.

Expected results
Blocks that can be waterlogged and are flammable or plants should be destroyed by lava instead of being able to hold it.
Also happens with sea pickles, and with water.
Can confirm with sea pickles in 18w15a.
I can see how this is intended with water (like with signs), but you'd expect lava to destroy the blocks instead (unlike signs)... so not sure regarding that part being WAI.
I'm not sure this works as intended. If you dig a one level deep hole, then dig out underneath it to make a deeper pond or lake, all the water except the top layer is flowing water. Which means if you place a sea pickle or a turtle egg under the water in this circumstance it creates a block of air around them.
The turtle eggs side of this could possibly could be considered a duplicate of
MC-125351.
