Since this is a continuing thing on both Grum and Dinnerbone, I would wonder if possibly this was an "easter egg" more than a bug. Or one of the programmers thought it was hillarious and put it in the code.

This is a easter egg mojang wanted to be funny so wen u name all mob Dinnerbone (exsept for squids) they will spawn upsidedown NICE WORK MOJANG U MADE ME LAUGH!
My fav thing to do on a beautiful day is to gallantly ride my upside down horse into the sunset.
